Jalapeno cornbread

Damn, this gives me an urge to whoop up some of this stuff, a pot of red beans and rice, and fry up a mess of them fish fillets I've got taking up space in the freezer. I do think I'd skip the corn and substitute onions instead.
To hell with trying to lose weight!!!

Yum. Any thoughts of weight loss for me will need to be postponed. We're heading down to New Orleans and the FL Gulf Coast for my son's and daughter's Spring Break. 3 Days in Destin, a week in NOLA. I'm afraid dieting is a capital crime in NOLA.

Eat some oysters for me, they're almost impossible to find in Bugtussell.
Good oyster joints were the only upside of living in Harlingen TX.
And have a safe trip.

I still have until next Friday to eat in a civilized manner. After that, I'd recommend you buy oyster futures. There may be a severe shortage after a week of oyster gluttony in NOLA.
Check out this place we're staying in NOLA. I went looking for a weekly rental on the NOLA Craigslist and found this room for $450 a week (normally $275/night). They're in the tourist lull between Mardi Gras and Jazz Fest and I was able to capitalize on it.

Funny you should mention jalapeno cornbread. My sister-in law started a new restaurant and my wife ordered jalapeno cornbread with her catfish. This being Oklahoma, she had fried okra instead of red beans and rice. Country cookin' is good, but it'll kill ya.
